When I found out my favourite pub, Bison Beer, and my favourite food, Baby Bao, were doing a collaboration I was SO. EXCITED.
Bison often have tap takeovers, BBQ’s and guest food on their patio, and as soon as I saw this event on their Twitter I knew I had to go.
Baby Bao, usually based at The Pond, is one of my favourite EVER food places in Brighton. The food is INCREDIBLE and such good value for money. As they were based on the patio at Bison, it was all BBQ and smoked food.
I decided to go for the Low & Slow cooked beef short rib bao. It came with charred onion and shoestring fries – I asked them not to put the scotch bonnet ketchup on as I’m a bit of wimp with spices.
Oh my god. It was INCREDIBLE. The beef was so full of flavour and melted in the mouth. It came with such a good amount of meat too.
Next up, I tried the spicy mac & cheese. It came with homemade kimchi, pineapple relish, coleslaw, peanuts, coriander and I added seitan brisket burnt ends too. Although as I said before, I’m not the best with spicy foods, it was worth it for this mac and cheese. Such a generous portion size, with all the bits on top really adding to the flavour. Since I first tried setain at the Hope and Ruin, I’ve developed quite a soft spot for it.
I had a pint of the Mango Unchained by Shin Digger Brewing Co, which Connor found too sweet but I really enjoyed. It’s blended with mango and pineapple, so perfect on a sunny day.
